    Sunday morning toddler pancake breakfast! Gluten Sunday morning toddler pancake breakfast!

Gluten free and dairy free! Only 6 ingredients!

Smash 1 banana. Add 2 eggs and 1/2 teaspoon of vanilla. Whisk together. Add 2 tablespoon of oat flour and 1/2-1 tablespoon of almond milk. Mix well. I also added 1 tablespoon of chia seeds. 

Lightly grease a pan. I used coconut oil. Once the pan is hot, use a tablespoon to drop the batter on the pan. 2-3 minutes. When the side of the pancakes start to bubble flip and cook another 1-2 minutes.

So easy and Mason loved them!

    Weekend trips don’t have take a toll on your nut Weekend trips don’t have take a toll on your nutrition and fitness. Here are a few tips for staying on track while you’re away from home. 

1. Meal prep - bring some of your staples with you. I always pack my protein powders, oats, and superhero muffins.

2. Look up local grocery stores and plan when you’re going to go. I always try to get this out of the way first thing, so I have food options and don’t have to stress about my next meal.

3. Plan a running or walking route. Look at a map and figure out your next workout. Or even look up local gyms in the area. Doing this ahead of time holds you more accountable. Even better, buy a pass to a local gym before you go.

4. Have fun and don’t stress too much! It’s one weekend.

    There are going to be days when you fall of track. There are going to be days when you fall of track. It’s bound to happen. 

This past weekend we celebrated our anniversary and our son’s second birthday. I was definitely not perfect with my nutrition. I had some cocktails, ate dinner out, and even enjoyed a little chocolate. Today is a new day and I’m excited to start fresh and get my nutrition back in gear. 

Stop beating yourself up when you fall off plan. 

Instead, get back up and get moving. One day at a time. 

Focus on progress, not perfection.
